Family Game Night & Eggy Tofu Salad!

So, this weekend we had an awesome opportunity to preview a game by USAopoly called Codenames. We had the Marvel edition, because well, we are super hero freaks! Anyway, it was a great excuse to make some plant-based deliciousness for friends and family.

As a plant-based believer, I take every opportunity to share recipes with my loved ones. I truly believe that a mostly plant-based diet can improve health and I’ve seen it in myself, my husband, and my children.

Here is my favorite Eggy-Tofu Salad party recipe that is the perfect Super Food for our Super Hero party with Codenames.

First, it helps to have a smiling shopper with you to get everything you’ll need!

Eggy tofu salad

Makes about 4 cups

Ingredients:

  • 14 oz. extra firm organic tofu (slice into thick pieces and press with paper towel to remove moisture)
  • 2 celery stalks
  • 1/4 cup of finely chopped Italian parsley
  • 2 medium pickles (Clausen is the only brand as far as I’m concerned)
  • 1/2 medium sweet onion
  • 2/3 – 1 cup Just Mayo vegan mayonnaise (I’m a heavy handed mayo-lover)
  • 1 tsp turmeric
  • 1 tsp black namak salt (grab it on Amazon here)
  • A couple shakes of cayenne pepper and/or black pepper to taste
  • A couple shakes of paprika on top of finished salad

Super Simple Preparation:

  1. Squeeze the tofu with paper towels to dry it (then dry it again, this is super important!)
  2. Crumble the tofu into a bowl
  3. Chop up all the veggies nice and small – add these to the bowl
  4. Add the mayo and spices by sprinkling over the top and MIX IT UP!
  5. Let it sit in the fridge for a couple hours and all the flavors will mix together
  6. Shake some paprika on top for color and to look all fancy and stuff – LOL

Super Secret Addition:

Add a few chopped and boiled potatoes to make a delicious potato salad! Woot! (I also add a little more mayo, because, well… LOL)

Lasts for about a week in the fridge. This is perfect with crackers or chips.

We had an awesome time playing Codenames. The best thing was that everyone could play! You don’t have to be a super hero Marvel expert in order to have super-sized fun. Although it seems a little complex upon reading the instructions, it’s actually a very simple game play. It’s only $10 online and it’s a great go-to game that the kids will love.
